The best vegan brunch recipes!

After a hard week at work, one of the best things you can do to make the weekend more exciting is to cook great meals at home. And as you all know, brunch is the most important meal of the day! 😉 Here are 3 great vegan brunch recipes that’ll make all your friends jealous!

1. The best vegan omelette

(1 portion)


  • ¼ cup of chickpea flour (40g)
  • ⅓ cup water (80ml)
  • 1 tbsp nutritional yeast
  • a pinch of salt
  • some veggies (anything you have kicking about)
  • olive oil for cooking
  • grated vegan cheese (optional) 

Mix together all of the ingredients, except the cheese. 

Heat a little olive oil in a frying pan and pour in the mixture. 

Cook for around 5 minutes on a medium heat, until the surface of the omelette is almost cooked through.

Flip it over and cook for another 3-5 minutes. 

Put the grated cheese on top and fold the omelette in half.

2. Scrambled tofu  


(2-3 portions)


  • 1 pack of firm tofu (400g)
  • 1.5 tbsp nutritional yeast 
  • 1 pinch of dried oregano
  • 1 tsp turmeric  
  • ½ tsp cayenne pepper
  • ½ tbsp mustard (Dijon or English) 
  • a splash of non-dairy milk
  • a pinch of salt (smoked salt is great if you have it)
  • olive oil for cooking


Heat a little olive oil in a frying pan.

Add in the tofu and scrape at it with a fork, breaking it into little pieces, until it resembles scrambled eggs. 

Add the nutritional yeast, oregano, turmeric, cayenne, mustard, and mix together. 

Cook for a few minutes and add a splash of milk to loosen it up. 

Season with salt and pepper to taste. 

And when it’s all heated through, the scrambled tofu is ready! You can eat it with some fresh bread, or even on its own or with some veg on the side if you’d rather avoid carbs. 😉

3. Deliciously sweet roasted tomatoes


(2 portions)


  • 1 basket of cherry tomatoes (250g)
  • some olive oil
  • ½ tbsp of sugar
  • salt
  • pepper


Add 3 tbsp of olive oil into a small baking dish. 

Slice the tomatoes in half and drop them into the oil.

Add the sugar, a pinch of salt, and pepper and mix the tomatoes around. 

Next, roast them in the oven at 180 degrees Celcius for around 30 minutes. 

And they’re ready! Eat them on top of some crusty bread, with a bit of avocado if you fancy. :)
